Serves: 4
Ingredients :
1. cups ripe tomatoes(approx.5largeĀ tomatoes) peeled, seeded and chopped, 2 cup coarsely chopped celery, 1/3 cup coarsely chopped sweet onion, 1/2-1 cup light cream, 1/2 tsp. sugar, 1tbs. fresh basil chopped, Salt to taste, Freshly ground pepper to taste.
Method :
1. Place all the ingredients (except the cream and basil) in a large saucepan.
2. Simmer for about 30min. till the vegetables are soft.
3. Use an immersion blender, puree the vegetable mixture to your preferred smoothness.
4. Add the light cream.
5. Heat the soup gently on low heat.
6. Before serving, stir in some fresh herbs with salt and pepper.
