Light & Tasty Mushroom Soup

Ingredients :

200gms, button mushrooms sliced, 2 stalks celery chopped, 1/2 cup, spring onions chopped, 750ml. water, 2tsp. garlic, finely chopped, 250ml milk, Salt and pepperĀ  to taste, 2-3 optional dried mushrooms, Spring onion greensĀ  to garnish.
Method :
1. Combine all the ingredients from mushrooms to water.
2. Heat till it begins to boil.
3. Lower the flame and gently simmer for 10-15 min.
4. Cool the cooked vegetables and blend till smooth.
5. Add milk, salt and pepper to taste.
6. Drain the optional mushrooms from water, discard the stalks and chop the caps and add to the soup.
7. Heat thoroughly and serve garnish with chopped spring onion greens.
